Not So Fast and Easy Spaghetti Sauce

This spaghetti sauce takes you the long way around. It’s not so long that you have to start with a tomato plant, but we’re not just opening cans here, either. Don’t get me wrong, sometimes a Spaghetti dinner is just me, a can of $0.99  Hunts and a package of dried noodles, but sometimes, sometimes I just want More. And here is my definition of More:)

Heat a large frying pan with about

3T Olive oil

Add:

1 large chopped yellow onion

2 or 3 minced garlic cloves

1 each chopped green and red pepper

1 small grated zucchini (optional)

1 handful minced fresh spinach (also optional, but fabulous)

1 large handful of sliced mushrooms (Blair won’t touch mushrooms, so I saute mine in a different pan, and have mine on top!)

Cook until tender then add:

2 or 3 chopped Roma tomatoes

32 oz tomato sauce (sometime this is where I use Hunt’s instead, depending on what I have on hand)

Simmer all for about 30 minutes.

If you like meat, I recommend adding either:

4 Italian style sausages (the kind in casings) cooked and sliced, or

1 lb ground Italian sausage, cooked, but not drained (just dump it all in, it’s delicious)

Also add spices:

1 T dried basil (or 4 or 5 chopped fresh leaves)

1 tsp oregano

1/2 tsp Thyme

1/4 marjoram (not everyone is a fan, smell it, and then add it if you like)

Salt and pepper to taste.

Simmer for additional 15 or so minutes, Cook your noodles at this time, as per package directions. And, I might add, the latest versions of whole wheat noodles are very tasty!
